Whenever I see a small plant like this one growing between concrete or gravel, I remember that some things just grow, no matter the circumstances, because they just have energy, or drive, or persistence. This dandelion not only grows in the gravel, but grows a bloom too! I’m not a proponent of weeds, but ya gotta hand it to ’em — tons of energy here.

    I’m not a plant person, but I know that before dandelions grow their flowers in the spring, their green leaves make a healthy salad or side dish, because they are good for us with vitamins and iron, or whatever ingredients that dark green, leafy plants have.

    In the spring, my sisters and I used to pick dandelions on our farm — with a paring knife and filling a kitchen colander — for our parents, and both of my grandmothers if they were visiting in early spring months. All knew how to make dandelion — saute, served warm like Belgian endive with a sweet-sour sauce, with slices of hard boiled eggs on top.

    What’s crazy today – to me – is the price of dandelion greens in upscale grocery stores — and to think that these dandelions were planted and grown in green houses! My adult relatives would wonder what the world came to.

    They’re just a weed, right?
